“It’s time we rethought luxury,” says Daniel Humm, Michelin-starred chef-owner of Make It Nice, the hospitality group behind NYC’s iconic Eleven Madison Park. Humm joins us with Gerhard Steidl, legendary founder of Steidl Publishing, to talk about their new book Eat More Plants with artist/writer Roni Horn. A collection of Humm’s drawings and handwritten notes, the book celebrates seasonal fruits and vegetables as it charts the reimagining of Eleven Madison Park as a wholly plant-based restaurant in 2021. Hear one of the world’s most revered chefs talk about what sparked his high-risk decision to reinvent the World’s Best Restaurant, 2017 as a fine dining destination with pro-planet values. And hear Humm, Steidl and Horn discuss the making of their beautiful book – the first by a chef from the renowned art publishing house – and their shared belief that we should all eat more plants.
